Quick and Easy Stir Fry

Ingredients

• •  1 tbsp oil (vegetable, sesame, or olive)
  • 1 protein of choice (about 1 cup):
    chicken, shrimp, beef, tofu, or chickpeas
  • 2 cups mixed veggies (fresh or frozen):
    bell peppers, broccoli, snap peas, carrots, onions
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger (or ½ tsp ground ginger)
  • Simple Stir-Fry Sauce:
  • 3 tbsp soy sauce (or tamari)
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sesame oil (optional)
  • 1 tsp cornstarch + 2 tbsp water (optional, for thickening)

Instructions

Heat oil in a large skillet or wok over medium-high heat.

Add protein of choice and cook until browned and cooked through. Remove and set aside.

Add veggies to the pan and cook 3–5 minutes until tender.

Stir in garlic and ginger; cook 30 seconds until fragrant.
